
Ingredients ( serves 4 )
1.6kg ripe tomatoes
1 half a cucumber
1 small green pepper
1 small loaf of day old bread
(soaked in water)
2 tablespoons of vinegar
2 garlic cloves
1 cup of olive oil
water
salt
Method
peel the tomatoes and cucumber and remove the seeds.
cut into small pieces and place into a blender with the
peeled garlic, olive oil, and salt as desired.
add the day old bread previously soaked in water.
blend well, add more or less 4 cups of water to he mixture, depending on the desired level of thickness.
place in a refrigerator and serve cold.
This can also be garnished with pieces of cucumber, tomatoes and pepper.
