The last Sunday of April is celebrated in Canillas de Aceituno “El Día de la Morcilla”, one of the best-known festivals in the entire province, coinciding with the festival of the Virgen de la Cabeza, patron saint of the town. The ceremony begins with a floral tribute in the church; Next, the image of the town’s patron saint is paraded through the streets and, after returning it to the church, the Blood Sausage Festival begins.
This day is marked by the consumption of more than 300 kilograms of native black pudding, which differs from the usual because it is made with onion and according to the traditional local recipe. It is usually offered with a glass of wine from the region for an ideal accompaniment. There is also live music for the hundreds of people who visit the municipality that day.
Other typical dishes that make up the extensive local gastronomy are kid meat baked or in almond sauce, gazpacho with grapes, ajoblanco, migas, fennel stew and succulent pot. of stew).
